Cajun Chicken Sausage & Shrimp Dinner (Dairy-Free)

 

Ingredients​

​

  •  12 ounces chicken sausage, sliced

  • ​1.5 pound large shrimp, peeled and deveined​

  • 4 tablespoons Cajun seasoning (devided)

  • 2 tablespoons olive oil

  • 3 cloves garlic, finely minced

  • 1 small yellow onion, diced

  • 1 tablespoon olive oil

  • 1 red bell pepper julienned 

  • 2 green bell pepper julienned 

  • 1.5 cup low-sodium chicken broth or stock

  • 1 cup Silk Dairy-Free Heavy Whipping Cream (more if needed)

  • 2 teaspoon salt and pepper (mixed)

  • 1 tablespoon smoked paprika

  • 2 Cups cooked brown rice or cauliflower rice

  • Vegan Shaved Parmesan, optional

  • 1 tablespoon fresh Parsley, chopped

Tips

​​

  • If sauce is too loose just add a little cornstarch mixed with water (slurry) and simmer until thickened (repeat for desired consistency)

  • After adding sausage and shrimp back to the pan be sure to take it off the heat quickly so the shrimp won't over cook.

  • Adding the cream changes the flavor, adjust seasoning to taste. You can also add more Cajun seasoning and some paprika for color and taste.   

  • Brown chicken sausages well for texture purposes.

Directions​

1.  In a large bowl add shrimp , olive oil , 1/2 Cajun seasoning and toss until coated.

2. In another bowl add chicken sausage other 1/2 of Cajun seasoning, a little bit of olive oil, toss until coated

​

3. Heat the oil in a large skillet over medium-high heat. Cook shrimp  for 5 minutes or until cooked through, stirring regularly. Remove from the pan and  set aside.

4. In the same pan add the chicken sausage and sauté until browned. Once browned remove from pan and set aside with shrimp. 

 

3. In the same pan add olive oil and onion stir fry until translucent. Add the bell peppers and sauté  for about 2-3 minutes.  Then add garlic and cook until fragrant (about one minute).

 

4.Next, pour in the vegetable broth, and allow to come to  a boil and  reduce down slightly (4 minutes)

 

4. Reduce heat to low, add the heavy cream, and bring to a gentle simmer, while stirring occasionally. Adjust seasoning with salt, pepper, and paprika  to taste.

5. Add the shrimp and sausage back into the skillet. Stir to combined then remove the heat and Enjoy !

6. Top with chopped parsley and parmesan if desired .  Serve with brown rice , cauli rice (low carb option), or steamed veggies
