Spicy Chickpea Chili
Ingredients​

1½ cups chopped brown mushrooms

1 cup small diced yellow onions

1 cup medium diced zucchini
-
1 , 14.5-ounce can crushed tomatoes

1 , 14.5-ounce can diced tomato
-
1 small diced jalapeños (without seeds)

1 cup canned garbanzo beans, drained and rinsed
-
1 cup canned red kidney beans
-
3 teaspoons chopped garlic
-
2 teaspoons chili powder
-
1 teaspoon ground cumin
-
1 1/2 teaspoons pepper flakes (for heat)

Avocado (for garnish)

Salt & Pepper to taste

Directions ​

Prepare a large skillet or pot, sprayed with nonstick spray or drizzled with olive oil.

Bring the skillet to medium-high heat. Add mushrooms, onion, and zucchini. Cook and stir until softened, about 8 minutes.

Add remaining ingredients, and bring to a boil. Stir occasionally
-
Cook until veggies are tender, and flavors have developed , about 6 minutes. (Add water in necessary) season with salt and pepper to taste.

Garnish with an avocado and enjoy !
