Spicy Chickpea Chili 

 

Ingredients​

  • 1½ cups chopped brown mushrooms 

  • 1 cup small diced yellow onions 

  • 1 cup medium diced zucchini 

  • 1 , 14.5-ounce can crushed tomatoes 

  • 1 ,  14.5-ounce can diced tomato

  • 1 small diced jalapeños (without seeds) 

  • 1 cup canned garbanzo beans, drained and rinsed 

  • 1 cup canned red kidney beans 

  • 3 teaspoons chopped garlic 

  • 2 teaspoons chili powder 

  • 1 teaspoon ground cumin 

  • 1 1/2 teaspoons pepper flakes (for heat) 

  • Avocado (for garnish) 

  • Salt & Pepper to taste

Garnish : 

  • Sliced Avocado 

 

Directions â€‹

  1. Prepare a large skillet or pot, sprayed with nonstick spray or drizzled with olive oil. 

  2. Bring the skillet to medium-high heat. Add mushrooms, onion, and zucchini. Cook and stir until softened, about 8 minutes. 

  3. Add remaining ingredients, and bring to a boil. Stir occasionally

  4. Cook until veggies are tender, and flavors have developed , about 6 minutes. (Add water in necessary)  season with salt and pepper to taste. 

  5. Garnish with an avocado and enjoy !
